Chipotle Black Bean Vinaigrette
Canned beans are naturally nutritious, providing significant values of protein, potassium, folate, calcium and iron. This recipe packs all of that goodness into a spicy, creamy vinaigrette that is as great on a salad as it is on tacos or quesadillas

Ingredients:

Black beans, drained and rinsed |

2 cloves |
Garlic, halved |

1 can |
Chipotle pepper |
|
1/2 cup |
Spicy salsa |
|
1/4 cup |
Apple cider vinegar |
|
1/4 cup |
Hot water |
|
1 teaspoon |
Kosher salt |
|
1/4 teaspoon |
Freshly ground black pepper |
|
2 tablespoons |
Extra-virgin olive oil |
Instructions:
To make the dressing, purée all of the ingredients in a blender or food processor until smooth. This dressing pairs well with corn, red pepper, tomato, cucumber, onion, arugula, watercress, avocado, and chicken.
