Savory Four Bean Ham-Pasta Salad
Turn a classic three-bean side salad into a hearty main dish. The more varieties of protein-rich, fiber-rich beans, the better!

Ingredients:

Rotini or elbow pasta, cooked |

1 can (15 oz) |
Three- or Four-bean salad* |
|
1 can (15 oz) |
Black beans, drained and rinsed |
|
1/2 cup |
Celery, chopped |
|
1/2 cup |
Green pepper, chopped |
|
1/2 cup |
Red onion slices |
|
1/3 cup |
Balsamic vinaigrette |
|
1 can (5 oz) |
Ham |
|
1 |
Large tomato, chopped |
|
1/4 cup |
Parsley, chopped |
Instructions:
Preparation:
In a medium bowl combine pasta, three- or four-bean salad, black beans, celery, green pepper, red onion and vinaigrette. Refrigerate for 1 to 2 hours, or overnight.
Before serving, gently combine pasta mixture with ham, tomato and parsley.
Servings: 6
*You may substitute canned green beans, yellow beans and/or kidney beans to equal 1 3/4 cups for the bean salad called for.
